While the coronavirus lockdown can’t end soon enough for newly qualified chef Will Davie, his family will certainly miss the meals he has produced for them during his time on furlough. Will, from Ibstock, was working as an apprentice six days a week at The Lancaster Arms in Desford learning kitchen skills from head chef Joe when the pandemic hit, and his career was interrupted. He is now looking forward to returning to work as soon as restrictions are lifted having successfully completed his commis chef apprenticeship during his time away from the workplace.  

Will has always loved food and was interested in cooking from a young age. He enjoys experimenting with different cuisines and favours Asian recipes. At the Lancaster Arms, he learnt how to create starters, gaining kitchen skills and plenty of experience in a busy live working environment. During lockdown, Will kept on cooking, determined not to let the situation hold him back. He watched endless episodes of ‘Masterchef’ to get new ideas and catered for his family as they were all at home together. Favourite recipes included Will’s homemade burgers and his beef stroganoff, not to mention Christmas dinner.  

With the help of his assessor, Phil Norris, who was on hand throughout Will’s apprenticeship, he successfully completed his qualification and is set to return to work with many new skills at his disposal.  

Will said, “My college work kept me going through lockdown and I worked hard on all my assessments. Phil was always available if I needed any help, and I was so glad that the college continued to support me, and that my employer has kept my job open for me. In the future I have dreams of travelling the world when it is safe again and would love to work on a cruise ship. 

“It is important to me to earn a living while I am studying so I get the valuable experience I need to be able to move on with my career.” 

Will’s assessor Phil Norris said, “Will has been devoted to his chosen profession, and is always looking for new recipes, working with Joe at work to design menus for special events at the pub. I wish him every success for the future.”
