Matthew, 18, from Nuneaton, is a catering student with a passion for customer service and hospitality. He combines his studies with a job at The Royal Arms in Sutton Cheney and hopes to progress in his career once he has completed his Level 3 programme in food and beverage service.

Matthew had always been interested in cooking and had thought he wanted to become a chef until he started at college and found himself enjoying the front of house element of the programme.

Always keen to test himself against his peers, Matthew competed in the College’s Salon Culinaire competition in January 2019, taking on live challenges including wine-opening, serving beer, and demonstrating his flambé skills with dishes of steak and crepe suzette. He won Best in Class and the Silver medal for drinks service, as well as Silver medals for both the main course and dessert flambé challenges.

Matthew will move straight into full-time work this summer when he completes his college course and sees himself as the owner or manager of a fine-dining restaurant in the future.
